Soy-glazed roast lamb recipe

Asian-inspired lamb roast with crispy lettuce.
Ingredients:
  • 60ml soy sauce
  • 20.00 gm mirin seasoning
  • 2 tsp sesame oil
  • 3cm-piece ginger, finely grated
  • 2 garlic cloves, crushed
  • 16.00 gm brown sugar
  • 2.5kg Lamb Leg Roast
  • Lettuce leaves, to serve
  • 150g snow peas, thinly sliced
  • 2 carrots, thinly sliced into matchsticks
  • Steamed jasmine rice, to serve
  • 1 long red chilli, thinly sliced, to serve
  • Spring onions, thinly sliced, to serve
Instructions:
  • 1. Preheat the oven to 180C. Combine soy sauce, mirin, sesame oil, ginger, garlic, and sugar in a jug. Transfer the mixture to a frying pan and heat over low heat until the sugar dissolves. Increase the heat to medium and simmer for 2 minutes until the glaze slightly thickens.
  • Place the lamb on a rack in a roasting pan. Make small cuts all over the surface. Brush with half the glaze, saving the rest. Roast, basting twice more with reserved glaze and covering with foil if needed, for 1 hour 30 mins. Transfer to a plate, cover with foil, and let rest for 20 mins.
  • Arrange thinly sliced lamb in crisp lettuce leaves along with crunchy snow peas, shredded carrot, fluffy rice, spicy chilli, and fresh spring onion for a delightful presentation.
