Authentic Italian spaghetti carbonara with guanciale, eggs, and Pecorino-Romano cheese for a beloved classic.
Ingredients:
  • 1 (14 ounce) package spaghetti
  • 5 ounces guanciale (cured pork cheek), cut into small cubes
  • 3 egg yolks
  • 1 egg
  • 0.75 cup grated Pecorino-Romano cheese
  • salt and freshly ground black pepper to taste
Instructions:
  • Bring a pot of salted water to a lively boil. Cook spaghetti until al dente, about 12 minutes. Drain.
  • In a skillet over medium heat, crisp up the guanciale by cooking and stirring for 5 to 10 minutes.
  • In a bowl, vigorously whisk together egg yolks and whole egg. Mix in Pecorino-Romano cheese, salt, and pepper until well combined. Gently fold in guanciale. Toss in spaghetti until it's completely coated in the delicious sauce.
