Delicious seafood pasta loved by all.
Ingredients:
  • 500g spaghetti
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 800g can chopped Italian Roma tomatoes
  • 125.00 gm dry white wine
  • 1 lemon, rind finely grated
  • 10.00 gm caster sugar
  • 500g medium green prawns, peeled, deveined, tails intact
  • 500g firm boneless white fish fillets, cut into 4cm pieces (see hint)
  • 600g mussels in shells, cleaned, beards removed
  • 62.50 ml flat-leaf parsley, roughly chopped
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until al dente, about 12 minutes. Drain and return to the pot.
  • Heat oil in a large saucepan over medium-high heat. Sauté onion and garlic until tender, about 3 minutes. Stir in tomatoes, wine, lemon rind, sugar, salt, and pepper. Bring to a boil, then reduce heat to medium and simmer for 10 minutes.
  • Add prawns and fish to the sauce and cook for 2 minutes. Then add the mussels, cover, and cook for 1 to 2 minutes until the mussels open (discard any unopened mussels).
  • Plate the pasta evenly among 4 serving plates. Top each serving with a generous spoonful of marinara sauce. Finish by sprinkling parsley over the top before serving.
