Delicious seafood pasta loved by all.
Ingredients:
500g spaghetti
1onion, finely chopped
2garliccloves, crushed
800g can choppedItalian Roma tomatoes
125.00 gm dry white wine
1lemon, rind finely grated
10.00 gm caster sugar
500g medium green prawns, peeled, deveined, tails intact
500g firm boneless white fish fillets, cut into 4cm pieces (see hint)
600g mussels in shells, cleaned, beards removed
62.50 ml flat-leaf parsley, roughly chopped
Instructions:
Boil pasta in a large pot of salted water according to package instructions until al dente, about 12 minutes. Drain and return to the pot.
Heat oil in a large saucepan over medium-high heat. Sauté onion and garlic until tender, about 3 minutes. Stir in tomatoes, wine, lemon rind, sugar, salt, and pepper. Bring to a boil, then reduce heat to medium and simmer for 10 minutes.
Add prawns and fish to the sauce and cook for 2 minutes. Then add the mussels, cover, and cook for 1 to 2 minutes until the mussels open (discard any unopened mussels).
Plate the pasta evenly among 4 serving plates. Top each serving with a generous spoonful of marinara sauce. Finish by sprinkling parsley over the top before serving.
