Create a nutritious green pasta dish with assorted greens.
Ingredients:
  • 400g spaghetti
  • 1 leek, trimmed, sliced
  • 2 garlic cloves, crushed
  • 40g butter
  • 150g snow peas, halved
  • 150g green beans, trimmed and halved
  • 1 bunch asparagus, cut into 5cm lengths
  • 150g pea
  • 500ml thickened cream
  • 70g parmesan
Instructions:
  • Prepare the spaghetti as directed on the packet. Cook leek and garlic in butter until soft.
  • Combine the 150g snow peas (halved), 150g green beans (trimmed and halved), 1 bunch asparagus (cut into 5cm lengths), and 1 cup (150g) shelled fresh peas. Stir and cook for about 2 minutes, stirring frequently.
  • Pour in 2 cups (500ml) of luscious thickened cream and simmer until it slightly thickens for 3-4 minutes. Mix in 3/4 cup (70g) of delicate shredded parmesan until it melts. Combine with the pasta, making sure it's fully coated. Serve promptly and enjoy!
