Spaghetti with chorizo, feta and spinach

Savor a flavorful pasta dinner enhanced by zesty Spanish sausage.
Ingredients:
  • 250g punnet cherry tomatoes, halved
  • Olive oil spray
  • 350g spaghetti
  • 2 (about 270g) chorizo sausages, thinly sliced
  • 4.60 gm olive oil
  • 80g baby spinach leaves
  • 160g Danish feta, cubed
  • Freshly ground pepper
  • Crusty bread, to serve
Instructions:
  • Preheat your oven to 180C. Line a baking tray with nonstick baking paper. Arrange tomatoes, cut side up, on the tray and give them a light drizzle of oil. Roast for 30-35 minutes or until they are soft and tender.
  • Cook the pasta in boiling water until al dente following packet instructions. Drain and return to the pan.
  • Preheat a non-stick frying pan over medium-high heat. Cook the chorizo, turning occasionally, for 2-3 minutes until golden brown and caramelized.
  • Mix the oil and 3 tablespoons of hot water, then pour over the warm pasta with spinach. Stir until the spinach starts to wilt. Add tomatoes, chorizo, and feta to the pasta. Season with pepper and gently toss everything together. Serve with crusty bread if desired.
