Whip up a delicious macadamia and kale pasta for a simple and flavorful vegetarian meal.
Ingredients:
  • 70g macadamia
  • 55g breadcrumbs
  • 160ml olive oil
  • 300g spaghetti or linguine
  • 6 garlic cloves, finely chopped
  • 2 bunches Tuscan kale or green kale, tough stems removed, leaves thinly sliced
  • 2 lemons, rind finely grated, juiced
  • 80g parmesan
Instructions:
  • Pulse macadamias in a food processor until they resemble breadcrumbs. Combine macadamias, breadcrumbs, oil, and 1/4 tsp salt in a frying pan over medium heat. Cook, stirring, for 5-6 mins until golden brown. Strain the mixture through a fine sieve into a bowl, saving the oil. Spread the mixture on baking paper to cool.
  • Boil the pasta in a big pot of water until al dente, stirring occasionally, for about 8 minutes. Save 1/2 cup (125ml) of the cooking liquid before draining.
  • Set aside 1 tablespoon of the reserved oil. Heat the rest in a large frying pan over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Gently mix in the kale, season with salt and pepper, and cook for 2 minutes until the kale wilts. Remove from heat.
  • Add the pasta to the vibrant kale mixture in the pan, sprinkle in the zest of a lemon, pour in 2 tablespoons of lemon juice, and drizzle in the reserved oil. Toss everything together until well coated. Stir in the flavorful parmesan, adjust seasoning with additional lemon juice, and add cooking liquid to achieve desired sauce consistency.
  • Serve the pasta mixture in individual bowls, sprinkle with macadamia mixture, and season to perfection before enjoying.
