Whip up a delicious pasta dish with cheese and olive tapenade using just a handful of ingredients for a simple and flavorful meal.
Ingredients:
  • 350g spaghetti
  • 2 lemons, zested, juiced
  • 250g mascarpone
  • 120.00 ml parmesan cheese
  • 80.00 ml good-quality olive tapenade (see Notes)
Instructions:
  • Prepare the pasta according to the package instructions until just al dente. Save 1/2 cup of the cooking water and reserve 1 tablespoon of the lemon zest. Combine the remaining zest in a pan with the mascarpone, lemon juice, and reserved water, heating through. Season with salt and pepper, then mix in the cooked pasta. Stir in 4 tablespoons of parmesan cheese. Divide the pasta among bowls, top each with a spoonful of tapenade, and sprinkle with more parmesan and zest before serving.
