Spaghetti with Squash

Sensational side dish for six with dual spaghetti - pasta and squash fusion!
Ingredients:
  • 1 medium spaghetti squash (about 3 lb)
  • 4 oz uncooked spaghetti, broken in half
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons butter or margarine, melted
  • 1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves
  • 1/2 teaspoon garlic salt
Instructions:
  • Pierce squash with a fork and place on a paper towel in the microwave. Microwave on High for 8 minutes, then flip over and microwave for an additional 8 to 11 minutes until tender. Allow to sit for 10 minutes before serving.
  • Cook spaghetti according to package instructions, then drain and return to saucepan.
  • Cut the squash in half lengthwise, remove the seeds and fibers, and reserve one half for later. Use two forks to remove spaghetti-like strands from the other half. In a saucepan, combine the spaghetti strands with the remaining ingredients and toss gently. Serve the spaghetti mixture in the reserved squash shell.
