Delicious savory muffins with Spam, Cheddar cheese, and spinach make a satisfying breakfast.
Ingredients:
  • 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), chopped
  • 1.5 cups whole wheat all-purpose flour
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon ground black pepper
  • 0.125 teaspoon paprika
  • 1 cup shredded Cheddar cheese
  • 6 tablespoons butter, melted
  • 0.5 cup chopped fresh spinach
  • 0.25 cup chopped onion
  • 5 basil leaves, chopped
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and give 12 muffin cups a gentle greasing.
  • In a skillet over medium heat, brown the luncheon meat by cooking and stirring it on all sides for about 5 minutes.
  • In a bowl, combine flour, baking powder, baking soda, salt, garlic powder, pepper, and paprika. In a separate bowl, mix luncheon meat, milk, Cheddar cheese, butter, spinach, egg, onion, and basil. Stir the wet ingredients into the dry ingredients until just combined. Fill muffin cups 3/4-full with the batter.
  • Bake until a toothpick inserted in the center of a muffin comes out clean, around 33 minutes in the preheated oven.
