Crispy phyllo dough filled with spinach and feta cheese, a simple but impressive Greek spanakopita pie.
Ingredients:
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 1 bunch green onions, chopped
  • 2 cloves garlic, minced
  • 2 pounds spinach, rinsed and chopped
  • 0.5 cup chopped fresh parsley
  • 1 cup crumbled feta cheese
  • 0.5 cup ricotta cheese
  • 2 large eggs, lightly beaten
  • 8 sheets phyllo dough
  • 0.25 cup olive oil, or as needed
Instructions:
  • Prepare your ingredients.
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly oil a 9-inch square baking pan.
  • In a large skillet over medium heat, warm 3 tablespoons of fragrant olive oil. Cook chopped onion, green onions, and garlic in the oil until tender and slightly golden, approximately 5 minutes.
  • Saute spinach and parsley until spinach is wilted, about 2 minutes. Remove from heat and let cool.
  • Combine the feta cheese, ricotta cheese, and eggs in a medium bowl until thoroughly mixed. Then, gently fold in the spinach mixture.
  • Place one sheet of phyllo dough in the baking pan, brush with olive oil, and layer another sheet on top, repeating the process with two more sheets so they overlap in the pan.
  • Evenly layer the spinach and cheese mixture in the pan, then tuck any excess dough over the filling. Lastly, brush with oil for a delicious finish.
  • Place the 4 remaining phyllo dough sheets on top, generously brushing each one with oil. Fold any excess dough over to create a seamless seal for the filling.
  • Bake until beautifully golden brown, for 30 to 40 minutes in the preheated oven.
  • Slice into squares and serve piping hot.
