Spanish meatball and cannellini bean soup

Impressive weeknight meal, nourishing and flavorful.
Ingredients:
  • 500g lean beef mince
  • 36.40 gm olive oil
  • 1 large onion, chopped
  • 1 red capsicum, deseeded and chopped
  • 1L Real Soup Base - Spanish
  • 400g can cannellini beans, rinsed and drained
  • 40.00 ml chopped parsley
Instructions:
  • Season the mince generously with salt and pepper, then shape it into small balls. In a large frypan, heat 1 tbsp of oil and brown the meatballs. Set them aside.
  • In a large saucepan, warm the remaining oil over medium heat. Sauté the onion and capsicum until tender, about 3-5 minutes. Add Campbell's Real Soup Base, then bring to a gentle simmer. Introduce the meatballs and beans, allowing everything to simmer until the meatballs are fully cooked.
  • Incorporate chopped parsley into the mixture.
