Spanish meatballs

Ingredients:
  • 500g lean beef mince
  • 75g Serrano ham, chopped
  • 2 cloves crushed garlic
  • 80.00 ml fresh parsley, chopped
  • 50g finely grated cheese
  • 2.00 tsp dried oregano
  • 1 beaten egg
  • Salt and pepper, to taste
  • 8 tomatoes, chopped
  • 36.40 gm olive oil
  • 2 crushed cloves garlic
  • 150ml red wine
  • 2.50 gm cornflour
Instructions:
  • Combine all meatball ingredients, using the egg as a binding agent.
  • Form the mixture into petite balls and sauté in a frypan over medium heat with a drizzle of olive oil until beautifully golden, about 7-10 minutes.
  • Prepare the sauce by heating olive oil and sautéing the onion, garlic, and tomatoes until the onion is caramelized.
  • Pour a generous amount of wine into the pot and sprinkle in the fragrant oregano. Allow the mixture to come to a boil, then lower the heat and let it simmer gently for 5 minutes.
  • Mix cornflour with a splash of water until smooth, then stir into sauce to thicken. Season to taste.
  • Arrange the meatballs in a serving dish and generously coat them with the delicious sauce before serving.
