Tender baked pork spare ribs with sauerkraut and red potatoes - a warm and comforting dinner for chilly nights.
Ingredients:
  • 1 rack pork spareribs cut into 2-rib portions
  • salt and pepper to taste
  • 1 (16 ounce) jar sauerkraut, drained
  • 4 red potatoes, quartered
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C) while generously coating a 9x13-inch baking dish with cooking spray.
  • Season the ribs generously with salt and pepper before placing them into the prepared baking dish.
  • After roasting in the preheated oven for 20 to 25 minutes, take it out and lower the temperature to 350 degrees F (175 degrees C).
  • Place the ribs on a plate and discard any excess grease from the baking dish. Evenly layer sauerkraut on the bottom of the dish. Arrange the ribs with the meaty sides facing up and nestle the potatoes amongst them. Cover the dish tightly with heavy-duty aluminum foil.
  • Bake the ribs for 30 minutes more, until an instant-read thermometer inserted into them reads at least 145 degrees F (63 degrees C). Carefully uncover and serve, being cautious of the hot steam.
