Sparkling cherry cocktail

Impress guests with a sparkling cherry cocktail.
Ingredients:
  • 300g pitted cherries, fresh or frozen
  • 107.50 gm caster sugar
  • 750ml non vintage champagne or sparkling white wine
Instructions:
  • In a small saucepan, combine cherries, sugar, and 1/4 cup of water. Simmer gently for 8-10 minutes until the cherries are tender and the liquid becomes syrupy. Let it cool down.
  • Blend mixture until velvety smooth, then strain through a fine sieve to catch any solids. Refrigerate syrup until needed.
  • For a delightful presentation, add a tablespoon of syrup to each champagne flute and pour champagne on top.
