Sparkling cherry cocktail

Impress with a cherry champagne cocktail.
Ingredients:
  • 300g pitted cherries, fresh or frozen
  • 107.50 gm caster sugar
  • 750ml non vintage champagne or sparkling white wine
Instructions:
  • In a small saucepan, combine cherries, sugar, and 1/4 cup water. Simmer over low heat for 8-10 minutes until cherries are tender and liquid thickens into a syrup. Let it cool.
  • Blend mixture in a blender until smooth, strain through a fine sieve to remove solids, then chill syrup in the fridge until needed.
  • In each champagne flute, elegantly pour 1 tablespoon of syrup followed by champagne for a touch of sweetness and fizz.
