Quick and delightful summer party dessert.
Ingredients:
  • 107.50 gm caster sugar
  • 2 strips orange rind
  • 125.00 gm sparkling white wine
  • 250g smooth ricotta cheese
  • 37.50 gm icing sugar mixture
  • 4.40 gm vanilla extract
  • 600g watermelon, cut into 3cm pieces
  • 200g cherries, seeded
  • 250g strawberries, hulled, halved
Instructions:
  • In a saucepan over medium heat, combine caster sugar and 1/3 cup cold water. Stir until the sugar is dissolved. Add orange rind and wine and bring to a simmer. Reduce the heat to low and simmer for 2 minutes. Transfer the mixture to a heatproof bowl and freeze for 5 minutes to cool.
  • Beat ricotta, icing sugar, and vanilla with an electric mixer until fully combined.
  • Separate fruit into individual serving bowls, then generously drizzle with syrup before serving alongside the creamy ricotta mixture.
