Delicate lemon snowflake cookies will steal the spotlight.
Ingredients:
  • 3/4 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 teaspoons grated lemon peel
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups powdered sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1/4 cup coarse white sparkling sugar
Instructions:
  • In a large bowl, cream together the butter and granulated sugar until light and fluffy using an electric mixer. Mix in lemon zest and egg until well combined. Gradually blend in the flour and salt on low speed until a smooth dough forms.
  • Preheat the oven to 350°F. Roll out the dough on a floured surface to 1/8 inch thickness. Use a 2 1/2- to 3-inch snowflake-shaped cookie cutter dipped in flour to cut out shapes. Arrange the cookies on ungreased baking sheets, spacing them 2 inches apart.
  • Bake the cookies until they just start to brown, for 8 to 10 minutes. Then, transfer them from the cookie sheets to cooling racks. Allow them to cool completely, which should take around 10 minutes.
  • Combine powdered sugar, lemon juice, and water in a small bowl. Spread glaze on cookie tops with a small metal spatula. Sprinkle with sparkling sugar. Allow glaze to dry before storing in an airtight container.
