Sparkling rosé and strawberry punch

Festive crowd-pleasing sparkling rosé strawberry punch.
Ingredients:
  • 107.50 gm caster sugar
  • 250g strawberries, hulled
  • 4 sprigs fresh thyme
  • 500.00 ml ice cubes
  • 750ml bottle rosé wine, chilled
  • 500.00 ml chilled soda water
Instructions:
  • In a small saucepan over medium heat, combine sugar and 1/2 cup water. Stir and cook until the sugar has dissolved, about 3 to 4 minutes. Increase the heat to high and bring to a boil, then reduce the heat to low and simmer until slightly thickened, about 3 to 4 minutes. Remove from the heat.
  • Slice the strawberries thinly, then toss them into the sugar syrup with half of the thyme. Give it a gentle stir to mix everything together, then let it sit until completely cool.
  • Slice the remaining strawberries thinly and add them to a 1.5-liter jug with ice cubes, sugar syrup, thyme, wine, and soda water. Gently stir to combine before serving.
