Sparkling strawberry cocktails

Ingredients:
  • 450g strawberries, hulled
  • 12.00 gm icing sugar
  • Crushed ice (optional)
  • 165ml vodka
  • 1 bottle sparkling wine, chilled
Instructions:
  • Combine ripe strawberries and sweet icing sugar in a blender or food processor, blending until a smooth puree forms.
  • Strain the puree through a fine sieve into a bowl, discarding the seeds. Cover the bowl with plastic wrap and chill in the refrigerator.
  • Fill each champagne flute halfway with crushed ice. Pour the chilled strawberry puree into each flute, then add 1 tablespoon of vodka to each. Finally, fill the flutes to the top with sparkling wine.
