Elevate green beans with zesty relish, pimentos, and crispy bacon for a modern take on a classic casserole.
Ingredients:
  • 6 slices bacon
  • 1 tablespoon bacon drippings
  • 0.5 sweet onion, chopped
  • 0.5 cup cider vinegar
  • 3 tablespoons sweet pickle relish
  • 1 (2 ounce) jar chopped pimento peppers
  • 2 (15 ounce) cans French-cut green beans, drained
Instructions:
  • In a large skillet, crisp up the bacon over medium-high heat, flipping occasionally until perfectly browned, which should take around 10 minutes. Lay the bacon on a paper towel-covered plate to drain, saving around 1 tablespoon of the tasty bacon drippings in the skillet. Then, give the bacon a good crumble.
  • Preheat your oven to 275°F (135°C).
  • Saute the onion in the flavorful bacon drippings until soft and translucent, approximately 5 minutes over medium-high heat.
  • In a large bowl, mix together the caramelized onion, sugar, cider vinegar, relish, pimento peppers, and green beans.
  • Pour the mixture into a baking dish and tightly cover with aluminum foil.
  • Bake uncovered in the preheated oven for 1 1/2 hours until golden brown, then gently stir.
  • Rest green beans for 15 minutes, then sprinkle with crumbled bacon before serving.
