Delicious spelt cookies with dried cherries and cocoa nibs - a unique twist on classic chocolate chip cookies, made in a flash!
Ingredients:
  • 1 cup brown sugar
  • 0.5 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups spelt flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup cocoa nibs
  • 0.5 cup dried cherries
Instructions:
  • Preheat your oven to 300°F (150°C).
  • In a bowl, use an electric mixer to blend brown sugar and butter until creamy. Mix in egg and vanilla extract until smooth. Add flour, baking soda, and salt; blend until dough forms. Fold in cocoa nibs and cherries. Spoon batter onto a baking sheet.
  • Bake the cookies in a preheated oven until they are slightly brown around the edges, for 10-12 minutes. Let them cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
