Nutty spelt spaghetti, high in fiber and beta-glucans, is a flavorful and cholesterol-friendly alternative to regular pasta.
Ingredients:
  • olive oil
  • ½ a bunch of fresh thyme (15g)
  • 4 cloves of garlic
  • ½ -1 fresh red chilli
  • 1 lemon
  • 500 g ripe mixed-colour cherry tomatoes on the vine
  • 250 g best-quality ricotta cheese
  • 320 g dried wholewheat spelt spaghetti
  • 4 handfuls of rocket
  • balsamic vinegar optional
Instructions:
  • - Preheat the oven to 180°C/350°F/gas 4. - Combine 3 tablespoons of oil in a small bowl. - Refresh the bunch of thyme under hot tap water for 3 seconds, then strip the leaves into the oil. - Slice the garlic and chili finely; add to the bowl. - Mix in grated lemon zest, a pinch of sea salt, and black pepper. - Place cherry tomatoes in a 30cm x 40cm baking tray. - Coat ricotta with flavored oil and place it in the center of the tray; rub the remaining oil over the tomatoes. - Add a splash of water to the tray and roast in the oven for 45 minutes. - Cook spaghetti in boiling salted water with 10 minutes remaining on the timer. - Remove ricotta from the tray and discard tomato stalks after shaking off. - Add half a mug of pasta water to the tray, loosening any sticking bits. - Drain spaghetti and toss it into the tray with lemon juice, seasoning. - Break ricotta over the top and sprinkle with rocket; toss well. - Drizzle with balsamic before serving, if desired.
