Spiced apple and carrot mini loaves

Spiced apple and carrot loaves: the ideal snack for lunch or a sweet pick-me-up.
Ingredients:
  • 210g self-raising flour
  • 105g plain flour
  • 220g brown sugar
  • 5.00 gm mixed spice
  • 180ml rice bran oil
  • 3 Free Range Eggs
  • 8.80 gm vanilla extract
  • 80ml milk
  • 1 large carrot, grated
  • 1 Fuji apple, cored, grated
  • 1 large Fuji apple, extra, cut into thin wedges
  • 1 tsp cinnamon sugar
Instructions:
  • Preheat your oven to 180C and grease an 8-hole mini loaf pan with a 3/4 cup (180ml) capacity.
  • In a bowl, combine the flours, brown sugar, and mixed spice. Mix well. In a separate bowl, whisk together the oil, eggs, vanilla, and milk. Stir in the carrot and grated apple. Pour the apple mixture into the flour mixture and gently combine until just mixed.
  • Spread the cake batter evenly in the prepared molds. Arrange the apple wedges on top and generously sprinkle with cinnamon sugar. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let it sit in the pan for 5 minutes before flipping onto a wire rack to cool. Enjoy warm or at room temperature.
