Spiced apple and fruit mince crumble slice

Enjoy a sweet and spicy apple crumble slice, ideal for brunch or snack time.
Ingredients:
  • 100g butter, softened
  • 70.95 gm caster sugar
  • 1 egg yolk
  • 312.50 ml plain flour
  • 2.00 gm baking powder
  • 92.50 gm semolina
  • 20.60 gm milk
  • 1/2 110g packet slivered almonds
  • 375g packet mixed fruit
  • 125.00 ml plum
  • 1 large apple, peeled, coarsely grated
  • 90.00 gm (firmly packed) brown sugar
  • 65.63 gm orange juice
  • 40.00 ml brandy, rum or orange juice
  • 5.00 gm mixed spice
  • 4.40 gm vanilla extract
  • 2.50 gm cinnamon
Instructions:
  • Simmer ingredients in a medium saucepan over medium-low heat until syrupy, stirring occasionally, for 4-5 minutes. Transfer mixture to a tray and allow it to cool.
  • - Preheat your oven to 180C (160C fan-forced) and prepare a 28cm x 18cm slice tin by greasing and lining it with baking paper. - In a mixing bowl, use an electric mixer to beat the butter and sugar together until creamy. Add the egg yolk and continue beating. - Gently fold in the flour, baking powder, semolina, and milk until combined. Use your hands to bring the mixture together. - Press three-quarters of the pastry evenly into the prepared tin, then spread the fruit mixture on top.
  • Combine almonds with the remaining crumble mixture and gently press over the filling. Bake for 25-30 minutes until lightly golden. Allow it to cool in the pan.
  • Trim the edges and cut into 4 strips, then dice each strip into 4-5 squares. Chill in the refrigerator during warm weather.
