Ingredients:
  • 1 tsp cracked black pepper
  • 1/2 tsp ground turmeric
  • 5.00 gm ground cumin
  • 600g chicken breast fillets, chopped
  • 1 brown onion, chopped
  • 1 cinnamon stick
  • 262.50 gm apricot nectar
  • 100g dried apricots
  • Toasted flaked almonds, to serve
  • Couscous, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • In a bowl, mix together the pepper, turmeric, cumin, and chicken until well combined.
  • In a large saucepan over medium-high heat, heat oil and cook onion until soft, about 5 minutes. Add chicken mixture and cinnamon stick, cook until chicken is lightly browned, about 4 to 5 minutes.
  • In a pan, combine apricot nectar and 1/2 cup of cold water. Bring to a boil, then reduce heat to medium-low. Simmer uncovered, stirring occasionally, until the sauce thickens, about 10 to 12 minutes.
  • Simmer dried apricots with chicken for 5 to 7 minutes until fully cooked. Discard cinnamon stick, then serve chicken over couscous. Garnish with almonds and coriander leaves before serving.
