Delicious apricot chicken recipe with sweet nectar and Moroccan spices, a modern twist on a classic. Budget-friendly, easy to make, and bursting with flavor. Perfect for cozy meals and sure to become a family favorite for generations. Serve with couscous or rice.
Ingredients:
  • 125.00 ml plain flour
  • 8 chicken thigh fillets, excess fat trimmed
  • 36.40 gm olive oil
  • 1 large brown onion, cut into thin wedges
  • 20.00 ml Moroccan seasoning blend
  • 405ml can apricot nectar
  • 125.00 ml dried apricots
  • 250.00 ml couscous
  • 250.00 gm boiling water
  • 82.50 ml fresh flat-leaf parsley leaves
Instructions:
  • In a shallow dish, flavor the flour with a pinch of salt and a sprinkle of pepper. Coat chicken pieces in the seasoned flour, shaking off any extra.
  • In a large, deep heavy-based frying pan over medium heat, heat half of the oil. Cook batches of chicken for 2 to 3 minutes on each side until golden brown, adding more oil if necessary. Transfer the chicken to a plate and set aside.
  • In a pan, heat the rest of the oil. Add onion and garlic, and cook for 5 minutes until tender, stirring occasionally. Sprinkle seasoning over the onion, stir well, then add nectar and bring to a boil. Reduce the heat to low, return the chicken to the pan, cover, and cook for 20 minutes.
  • Place the apricots in the pan and press them gently into the sauce. Continue to cook uncovered for an additional 20 to 25 minutes until the chicken is fully cooked and the sauce has thickened.
  • Place couscous in a heatproof bowl. Pour over boiling water, cover, and let it stand for 5 minutes until water is absorbed. Fluff the couscous with a fork to separate grains, then spoon onto plates. Top with chicken and sauce, sprinkle with parsley, and serve.
