Spiced basmati rice

Ingredients:
  • 250g basmati rice
  • 36.80 gm vegetable oil
  • 2 cinnamon sticks, halved
  • 6 cardamom pods, bruised
  • 20.00 ml fresh curry leaves
  • 50g almond
  • 50g raisins
  • 2.40 gm salt
  • 250.00 ml fresh coriander leaves
Instructions:
  • Place the rice in a sieve and rinse it under cold running water until the water runs clear. Give it a good shake.
  • In a saucepan over medium heat, warm the oil. Sauté the cinnamon sticks, cardamom pods, and curry leaves for 2-3 minutes until fragrant. Add the rice, nuts, and raisins; mix until the grains shine. Pour in 600ml water, add salt, and bring to a boil. Cover, lower heat, and simmer for 15 minutes.
  • Let the mixture sit off the heat, covered, for 10 minutes. Stir in the coriander before serving.
