Spiced carrot salad with honey & orange blossom dressing

Sweet and spicy carrots elevate this exotic salad.
Ingredients:
  • 8 carrots, peeled, thickly sliced diagonally
  • 20.00 ml finely chopped fresh coriander
  • 20.00 ml finely chopped fresh continental parsley
  • 20.00 ml finely chopped fresh mint
  • 2.50 gm ground sweet paprika
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp dried chilli flakes
  • 57.20 gm honey
  • 10.60 gm fresh lemon juice
  • 1/2 tsp orange blossom water
Instructions:
  • Boil the carrot in a large saucepan of salted water for 6-8 minutes until tender. Then, cool it down under cold running water and drain thoroughly.
  • Prepare the honey & orange blossom dressing by toasting the paprika, cumin, ground coriander, and chili in a hot frying pan until fragrant. Remove from heat and mix in honey, oil, lemon juice, and orange blossom water until well combined.
  • Add the carrots to a serving bowl, drizzle the dressing, and mix thoroughly. Season with salt and pepper. Chill in the fridge for 2 hours to enhance the flavors.
  • Combine the fresh coriander, parsley, and mint with the salad, gently tossing until mixed. Serve promptly.
