Spiced chats with garlic mayonnaise

Elevate your party with our modern twist on a classic favorite.
Ingredients:
  • 1kg baby coliban (chat) potatoes
  • 36.40 gm olive oil
  • 2 tsp coriander seeds, crushed
  • 1 tsp fennel seeds, crushed
  • 4.80 gm sea salt flakes
  • 1/4 tsp coarsely ground black pepper
  • 2 garlic cloves, crushed
  • 1 egg yolk
  • 5.90 gm Dijon mustard
  • 2 tsp sherry vinegar
  • 125ml olive oil
Instructions:
  • Preheat the oven to 200°C. Toss potatoes, oil, coriander, fennel, salt, and pepper in a roasting pan until well coated. Roast in the oven for about 30 minutes, turning occasionally, until golden brown and tender. Set aside after removing from the oven.
  • For the garlic mayonnaise, simply blend garlic, egg yolk, mustard, and vinegar in a food processor until combined. Slowly drizzle in the oil with the motor running until the mixture is thick and pale. Season with salt and pepper to taste.
  • Combine the potatoes and garlic mayonnaise in a large serving bowl. Serve promptly.
