Quick and easy kid-friendly Moroccan chicken on veggie-packed tabouli. Ready in 25 minutes.
Ingredients:
  • 4 chicken breast fillets
  • 40.00 ml moroccan seasoning
  • 60ml olive oil
  • 300g frozen broccoli and cauliflower rice or cauliflower rice
  • 1 continental cucumber, finely chopped
  • 1/2 red onion, finely chopped
  • 125.00 ml flat-leaf parsley, chopped
  • 125.00 ml mint, coarsely chopped
  • 1 lemon, zested, juiced
  • 130g dip
  • 125.00 ml pomegranate seeds
Instructions:
  • In a large glass or ceramic bowl, mix together the chicken, Moroccan seasoning, and 1 tablespoon of oil.
  • Preheat a barbecue grill or chargrill to medium heat. Grill the chicken for 5-6 minutes on each side or until fully cooked. Place the chicken on a plate, cover with foil to keep warm, and let it rest for 5 minutes before slicing it thickly.
  • Place the broccoli and cauliflower rice in a large heatproof bowl and cover with boiling water. Let sit for 2 minutes until the rice is tender. Drain, refresh under cold water, then combine with cucumber, onion, parsley, mint, lemon juice, and remaining oil. Season to taste.
  • Serve the tabouli on plates, layer with chicken and dip, then garnish with lemon zest and pomegranate seeds.
