Indian spiced lemon dressing elevates chickpea and tomato salad with fresh coriander.
Ingredients:
  • 1 tsp garam masala
  • 18.20 gm olive oil
  • 21.00 gm fresh lemon juice
  • 1 x 400g can chickpeas, rinsed, drained
  • 200g green beans, topped, halved
  • 1 x 250g punnet grape tomatoes, halved
  • 1 Lebanese cucumber, ends trimmed, halved, thinly sliced diagonally
  • 4 shallots, white part only, ends trimmed, thinly sliced
  • 125.00 ml fresh coriander leaves
  • Natural yoghurt (optional), to serve
Instructions:
  • Combine the garam masala, olive oil, and lemon juice in a big bowl. Mix in the chickpeas until well coated.
  • Blanch the beans in boiling water for 2-3 minutes until vibrant green and crisp-tender. Shock in cold water and drain.
  • Combine the beans, tomato, cucumber, shallot, and coriander with the chickpea mixture, gently toss until mixed. Season with salt and pepper. Serve with yogurt, if preferred.
