Spiced dulce de leche banana bread: Sweet, fruity, and moist. Perfect for guests or anytime.
Ingredients:
  • For the banana bread
  • Cooking spray
  • 1 1/2 cup (190g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup dulce de leche
  • 3 medium ripe bananas, roughly chopped
  • 1/3 cup (76g) unsalted butter, melted and cooled slightly
  • 2 large eggs
  • For the streusel and optional drizzle
  • 3 tablespoons brown sugar
  • 1/4 teaspoon kosher salt
  • 2 tablespoons unsalted butter, room temperature
  • 1/4 cup dulce de leche, optional
  • About 1 tablespoon milk, optional
Instructions:
  • Preheat your oven to 350°F and lightly coat a 9x5 or 8 1/2x 4 1/2-inch loaf pan with non-stick spray.
  • In a medium bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg to create the dry ingredients for the bread. Keep aside.
  • Combine the sugar, dulce de leche, and bananas: Place the granulated sugar, dulce de leche, and chopped bananas into the bowl of a stand mixer fitted with the paddle attachment. Mix on medium-low speed for 1 minute, pausing to scrape down the sides of the bowl halfway through.
  • Combine the rest of the ingredients in the bread batter: Lower the speed and gradually mix in half of the flour mixture, 1/4 cup at a time, to prevent a mess. After adding half of the flour mixture, pour in the melted butter, then the eggs. Once the eggs are mixed in, add the remaining flour and mix until just combined, remembering to scrape down the sides and paddle. Transfer the batter to the loaf pan and proceed to make the streusel.
  • Prepare the streusel by combining flour, brown sugar, cinnamon, and salt in a medium bowl. Incorporate the butter using your hands until the mixture resembles wet sand. Sprinkle the streusel over the batter.
  • Bake the bread until a cake tester or toothpick inserted in the center comes out clean, for 50 minutes to 1 hour and 10 minutes (adjusting for pan size). Allow the loaf to cool completely in the pan.
  • Drizzle with optional dulce de leche: Warm dulce de leche in the microwave for 10 to 15 seconds until heated. Thin it slightly with milk, adding more as needed. Drizzle over the bread before serving. Store the bread (without drizzle) tightly wrapped for up to 4 days. Share your feedback below!
