Indulgent Sunday morning dish perfect for a special someone or a lavish brunch spread.
Ingredients:
  • 4 eggs, lightly whisked
  • 80ml (1/3 cup) milk
  • 40.00 gm caster sugar
  • 1.25 gm ground cinnamon
  • 35g (1/3 cup) coarsely chopped walnuts
  • 40g butter
  • 8 thick slices panettone
  • 200g frozen mixed berries, thawed
  • Maple syrup, to serve
  • Double cream, to serve
Instructions:
  • Combine the egg, milk, sugar, and cinnamon in a large bowl and whisk until well blended.
  • Heat a non-stick pan over high heat until hot. Add walnuts and cook, tossing, for 2 minutes. Transfer to a bowl.
  • Melt a portion of the butter in a frying pan over medium-high heat until foamy. Dip panettone slices one by one in the egg mixture. Cook until golden, about 1-2 minutes per side. Transfer to a plate. Repeat with the rest of the butter, panettone, and egg mixture in three more batches, reheating the pan in between.
  • Serve French toast topped with a medley of fresh berries, a generous drizzle of pure maple syrup, a sprinkle of crunchy walnuts, and a side of creamy whipped cream.
