Spiced pumpkin French toast recipe

Indulgent French toast with warm spices, maple syrup, crunchy pumpkin seeds, and tangy dried cranberries. Breakfast perfection.
Ingredients:
  • 4 eggs
  • 169.95 gm milk
  • 125.00 ml mashed pumpkin
  • 40.00 gm caster sugar
  • tsp vanilla extract
  • 1.25 gm mixed spice
  • 15g butter
  • 4 thick slices of brioche
  • vanilla yoghurt, to serve
  • maple syrup, to serve
  • pepitas, to serve
  • dried cranberries, to serve
Instructions:
  • In a large shallow dish, combine 4 eggs, 2⁄3 cup milk, 1/2 cup mashed pumpkin, 2 tablespoons caster sugar, 1 teaspoon vanilla extract, and 1/2 teaspoon mixed spice. Whisk until smooth.
  • In a large frying pan over medium heat, melt 15g of butter. Dip 4 thick slices of brioche into the egg mixture, ensuring both sides are well coated.
  • Place the brioche slices in the pan and cook for 2 minutes on each side until beautifully golden brown. Repeat this process with butter and the rest of the egg mixture for additional slices.
  • Top with creamy vanilla yoghurt, a generous drizzle of sweet maple syrup, and a sprinkle of crunchy pepitas and tart dried cranberries.
