Indulge in delicious spiced ginger-peach ice cream, perfect to enjoy solo or sandwiched between cookies.
Ingredients:
  • 1 cup milk
  • 0.75 cup white sugar
  • 0.25 teaspoon salt
  • 3 ounces peach puree
  • 0.75 teaspoon ground ginger
  • 0.5 teaspoon ground cinnamon, or more to taste
  • 0.25 teaspoon vanilla extract
  • 3 egg yolks, lightly beaten
  • 2 cups heavy whipping cream
  • 4 fresh peach slices, diced, or more to taste
Instructions:
  • In a saucepan over medium heat, combine milk, sugar, and salt and whisk until simmering. Stir in peach puree, ginger, cinnamon, and vanilla extract. Simmer for 5 to 10 minutes until flavors meld.
  • In a small bowl, gently mix egg yolks. Gradually add 1/2 cup of hot milk mixture while whisking continuously. Transfer the warm egg mixture into the saucepan with the milk mixture over medium heat. Cook until thickened, stirring occasionally, for 5 to 10 minutes. Strain the mixture into a chilled bowl and refrigerate, stirring occasionally, until cold, approximately 2 hours.
  • Gently fold chilled whipped cream into the egg mixture, then mix in the peaches until well combined.
  • Transfer the peach mixture into the ice cream maker's container and freeze as per the manufacturer's guidelines.
