Italian spiced fruitcake, a Christmas classic.
Ingredients:
  • 2 sheets rice paper
  • 115g (3/4 cup) plain flour
  • 2.50 gm ground cinnamon
  • 2.50 gm mixed spice
  • 1/4 tsp ground white pepper
  • 160g almond
  • 150g hazelnuts
  • 95g sultana
  • 60g dried fig
  • 110g glace pineapple
  • 65g ginger
  • 60g glace peach
  • 140g caster sugar
  • 125ml honey
  • 40.00 gm water
  • Icing sugar mixture, to dust
Instructions:
  • Preheat oven to 160°C. Grease a 20cm diameter springform pan and line the base with rice paper sheets, trimming them to fit with scissors. Spread almonds on one tray and hazelnuts on another. Bake in the preheated oven for 5 minutes or until toasted. Remove from oven and rub hazelnuts in a tea towel to remove skins.
  • In a large bowl, mix together the flour, cinnamon, mixed spice, coriander, pepper, almonds, hazelnuts, sultanas, figs, pineapple, ginger, and peach.
  • In a small saucepan over medium heat, mix sugar, honey, and water. Stir and cook for 2 minutes until sugar dissolves. Let it cook for 5 more minutes until the syrup slightly thickens without stirring.
  • Combine the sugar mixture with the nut mixture, stirring until fully mixed. Press the mixture into the prepared pan firmly. Bake for 40 minutes until slightly firm with a soft center. Let it cool in the pan, then dust with icing sugar and slice thinly.
