Spiced lamb skewers with barbecued potatoes

Impress your guests with succulent spiced lamb skewers paired with crispy barbecue potatoes.
Ingredients:
  • 800g lamb rump steaks, cut into 4cm pieces
  • 1 lemon, rind finely grated, juiced
  • 5.00 gm ground cumin
  • 1 tsp turmeric
  • 1/2 teaspon ground cardamom
  • 600g kipfler potatoes, washed, halved
  • 200g button mushrooms
  • 1/2 bunch fresh mint, leaves picked
  • 57.20 gm honey
  • 23.40 gm Dijon mustard
  • 300g pkt kale slaw
Instructions:
  • In a large bowl, combine the lamb with lemon rind, garlic, cumin, turmeric, and cardamom. Season to taste and mix well. Set the mixture aside.
  • In a large microwave-safe bowl, combine the potatoes and 60ml (1/4 cup) water. Cover with 2 sheets of plastic wrap and microwave on High for 5-6 minutes until just tender. Drain and set aside.
  • Thread lamb onto wooden skewers that have been soaked, alternating with mushrooms and mint leaves. Arrange them on a lined baking tray. In a bowl, mix honey, mustard, and 1 tablespoon of lemon juice. Drizzle the honey mixture over the skewers and potatoes. Toss everything to coat evenly and season to taste.
  • Preheat a chargrill pan or barbecue grill over high heat. Lightly coat the lamb and potato with oil. Grill skewers and potato for 2-3 minutes per side until golden and cooked. Serve alongside a fresh kale slaw.
