Spiced orange and raisin brownies

Zesty orange rind adds a unique twist to these indulgent, fudgy brownies loaded with nuts, raisins, and rich dark chocolate.
Ingredients:
  • Melted butter, to grease
  • 200g unsalted butter, chopped
  • 125g dark organic chocolate, coarsely chopped
  • 315g (1 1/2 cups) caster sugar
  • 3 eggs
  • 6.60 gm vanilla essence
  • 115g (3/4 cup) plain flour
  • 30g (1/4 cup) cocoa powder
  • 2.50 gm ground mixed spice
  • 170g (1 cup) raisins, chopped
  • 65g (1/3 cup) mixed peel
Instructions:
  • - Preheat your oven to 170°C. - Grease a 19 x 29cm slab pan with melted butter and line the base and two long sides with non-stick baking paper. - In a small saucepan over low heat, gently stir the butter and chocolate for 5 minutes until almost melted. Let it cool slightly, stirring occasionally until smooth.
  • In a large bowl, use an electric beater to whip the sugar and eggs until they are thick and pale. Mix in the chocolate mixture, orange rind, and vanilla. Then, sift in the flour, cocoa powder, and mixed spice, and stir until smooth. Finally, fold in the raisins and mixed peel.
  • Transfer the mixture into the pan and bake for 35-40 minutes or until the center is firm and a skewer comes out with a few crumbs. Let it cool in the pan before slicing into pieces.
