Gift-worthy spiced citrus pickle, perfect for gifting or pairing with cheese.
Ingredients:
  • 1.4kg (about 4 large) oranges
  • 2.40 gm salt
  • 400g caster sugar
  • 67.00 gm golden syrup
  • 185ml (3/4 cup) white wine vinegar
  • 125ml (1/2 cup) fresh orange juice
  • 6 slices fresh ginger
  • 1 tsp black peppercorns, crushed
  • 1 cinnamon stick
  • 1 tsp whole cloves
Instructions:
  • In a large saucepan, combine the oranges and salt, cover with cold water, and place a plate over the oranges to keep them submerged. Simmer over medium-low heat for 40 minutes until the oranges are tender. Drain and let cool before cutting the oranges in half and thinly slicing crossways.
  • Combine sugar, golden syrup, vinegar, orange juice, ginger, peppercorns, cinnamon stick, and cloves in a large saucepan over medium heat until sugar dissolves. Mix in the orange and bring to a simmer. Reduce heat to low and cook for 20 minutes. Transfer to sterilised jars, seal, and store in a cool, dark place or the fridge for a minimum of 3 weeks to enhance flavors before opening.
