Spiced parmesan palmiers

French pastry made with high-quality puff pastry.
Ingredients:
  • 1/2 tsp lemon pepper seasoning
  • 40.00 ml finely grated parmesan
  • 0.63 gm ground paprika
  • Pinch of salt
  • 1 sheet (25 x 25cm) ready-rolled frozen puff pastry, just thawed
Instructions:
  • Heat your oven to 200°C and prepare a baking tray by lining it with non-stick baking paper.
  • Grind the lemon pepper seasoning until finely crushed using a spice grinder or mortar and pestle. Transfer it to a small bowl, then add the parmesan, paprika, and salt. Stir to combine the ingredients well.
  • Evenly brush oil on the pastry. Sprinkle half of the lemon-pepper mixture all over. Fold two sides towards the center. Sprinkle with the remaining lemon-pepper mixture.
  • Fold in the sides and sprinkle generously with the lemon-pepper mixture until you form a double log. Slice crossways into 1cm-thick slices. Arrange the pastry slices cut-side up on the tray, leaving space for spreading.
  • Preheat oven. Bake palmiers for 10 minutes until golden brown and puffed. Flip them over and bake for an additional 4-5 minutes until fully cooked. Serve warm or at room temperature.
