Spiced pear cake with butterscotch sauce

Spiced pear cake drenched in irresistible butterscotch sauce for a decadent treat.
Ingredients:
  • 200g butter, softened
  • 215.00 gm raw caster sugar
  • 4 eggs
  • 165.00 ml plain flour
  • 8.00 gm baking powder
  • 3.75 gm mixed spice
  • 100.00 gm almond meal
  • 82.50 ml pecans, chopped
  • 2 ripe beurre bosc pears
  • 10.00 gm raw caster sugar, extra
  • 180.00 gm firmly packed brown sugar
  • 50g butter
  • 252.50 gm pure cream
  • 4.40 gm vanilla extract
Instructions:
  • - Preheat your oven to 170°C/150°C fan-forced. - Grease a 7cm-deep 20cm cake pan and line the base and sides with baking paper. - In a mixing bowl, beat butter and sugar until light and fluffy using an electric mixer. - Add eggs one at a time, beating well after each addition (don't worry if the mixture looks curdled). - Sift flour, baking powder, and mixed spice over the butter mixture. - Add almond meal and pecans, then fold everything together until combined.
  • Transfer the prepared mixture into the cake pan and ensure the top is smooth. Quarter the pears and slice them thinly while leaving the stalk and top intact. Place the pear slices over the cake, slightly overlapping them. Sprinkle extra sugar on top. Bake for 1 to 1 1/4 hours until a skewer inserted in the center comes out clean. If it starts to brown too quickly, cover it with foil. Let it sit in the pan for 10 minutes, then flip it onto a wire rack.
  • Prepare the Butterscotch sauce by combining sugar, butter, cream, and vanilla in a saucepan over medium heat. Stir continuously for 4 minutes until the sugar dissolves. Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes until it thickens. Serve the sauce over the cake.
