Spiced prune buttermilk loaf

Spicy slice with cinnamon sugar crumble, perfect with tea and a good read.
Ingredients:
  • 150g prune
  • 260.00 gm buttermilk
  • 125g butter, softened
  • 161.25 gm caster sugar
  • 4.40 gm vanilla extract
  • 2 eggs, at room temperature
  • 300.00 gm self-raising flour
  • pinch salt
  • 3.75 gm ground cinnamon
  • 2.50 gm ground nutmeg
  • 1 tsp allspice
  • whipped thickened cream, to serve
  • 82.50 ml plain flour
  • 59.40 gm brown sugar
  • 1.25 gm ground cinnamon
  • 50g butter, chopped
Instructions:
  • In a bowl, mix prunes and 1/2 cup of buttermilk. Let it soak for 1 hour.
  • Prepare a delectable crumble topping by blending flour, brown sugar, cinnamon, and butter in a food processor until it reaches a coarse breadcrumb consistency.
  • Preheat your oven to 180°C. Line a 7cm-deep, 10.5cm x 20.5cm loaf pan with baking paper, leaving a 2cm overhang on both long ends.
  • In a bowl, use electric beaters to whip together butter, caster sugar, and vanilla until light and creamy. Add the eggs one at a time, beating well after each addition.
  • Sift flour, salt, cinnamon, nutmeg, and allspice over the butter mixture. Gently incorporate flour mixture, remaining 1/2 cup of buttermilk, and prune mixture one by one using a large metal spoon. Transfer batter into the prepared pan, sprinkle crumble over the top. Bake for 55 to 60 minutes until a skewer comes out clean. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve with cream.
