Quick and easy spiced salmon pot pies, bursting with delicious flavors.
Ingredients:
  • 187.50 ml fresh breadcrumbs
  • 62.50 ml grated parmesan
  • 82.50 ml chopped chives
  • 36.40 gm olive oil
  • 1 onion, coarsely chopped
  • 2 garlic cloves, crushed
  • 500g skinless salmon fillets, cut into 2cm pieces
  • 3 tomatoes, coarsely chopped
  • 400g can Brand chickpeas, rinsed, drained
  • 200g natural yoghurt
  • 2.50 gm Brand ground paprika
  • 1.25 gm Brand ground cumin
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 180C (or 160C for fan-forced). Mix breadcrumbs, parmesan, and 1 tablespoon of chives in a bowl. In a frying pan over high heat, sauté onion and garlic in oil until soft (about 1-2 mins). Add salmon, tomato, and chickpeas, and sauté for an additional 2 mins to blend flavors.
  • Combine yoghurt, paprika, cumin, and remaining chives into the salmon mixture. Season to taste, then distribute evenly among four 1 1/2 cup ramekins on a tray. Sprinkle with breadcrumb mixture.
  • Bake until golden brown, about 10-15 minutes. Serve with lemon wedges on the side.
