Indulge in succulent Middle Eastern-inspired turkey year-round.
Ingredients:
  • 290g (1 1/2 cups) couscous
  • 250ml (1 cup) boiling water
  • 2 tsp ground coriander
  • 7.50 gm ground cumin
  • 4 (about 125g each) turkey breast steaks
  • 18.20 gm olive oil
  • 125.00 ml fresh continental parsley leaves
  • 1 small red onion, halved, thinly sliced
  • 60g (1/3 cup) finely chopped dried dates
  • 45g (1/3 cup) coarsely chopped blanched almonds
  • 42.00 gm fresh orange juice
  • Steamed green round beans, to serve
Instructions:
  • In a spacious heatproof bowl, add couscous and water. Cover with plastic wrap and let it sit for 4 minutes until all liquid is absorbed. Fluff the grains with a fork to separate them.
  • Mix coriander and 2 teaspoons of cumin in a bowl. Season both sides of turkey with the spice mix. Heat half the oil in a large non-stick frying pan over high heat, then cook the turkey for 3 minutes on each side until golden and fully cooked. Transfer the turkey to a plate.
  • Mix parsley, onion, date, and almond into the couscous. Combine orange juice, remaining oil, and cumin in a jug, then pour over the couscous mixture. Season with salt and pepper, toss well. Slice turkey thickly and serve over couscous with beans.
