Spiced turkey tenderloin with quick pan sauce is a delicious and convenient alternative to roasting a whole turkey, ready in under an hour.
Ingredients:
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar
  • 2 turkey tenderloins (about 1 1/2 pounds)
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons whole-grain Dijon mustard
  • 2 tablespoons salted butter
  • 1 large orange, halved
Instructions:
  • Preheat your oven to 350°F and position a rack in the center. Select a large, oven-proof skillet for the turkey tenderloins, ensuring there is space around them.
  • Prepare the spice rub by mixing garlic powder, paprika, cumin, salt, pepper, and sugar in a small bowl until well combined. Lay the turkey tenderloins on a work surface, dry them with a paper towel, and generously coat them with the spice rub.
  • Achieve a perfect sear on the turkey: Heat the skillet on medium-high, coat with oil, and place the tenderloins in a single layer. Sear until golden brown, about 3 minutes per side.
  • Place the skillet in the oven and bake the turkey until cooked through, approximately 30 minutes. Use an instant-read thermometer to ensure the turkey reaches an internal temperature of 160°F in the thickest part of each tenderloin. Remember, the temperature will rise slightly after removing it from the oven.
  • Prepare the mustard sauce by transferring the cooked turkey to a carving board to rest for 10 minutes. Then, in the hot pan, combine mustard, butter, and orange juice. Stir until the butter melts and all ingredients are mixed with the pan drippings.
  • Serve in style: Slice the tenderloins into elegant 1/2-inch thick pieces and artfully place on a serving plate. Combine any juices from the cutting board with the mustard sauce, then carefully pour into a chic pitcher or bowl for a classy presentation.
