Turkey Tenderloins and Mixed Sweet Peppers

Turkey with bell peppers and herbs for a fresh and flavorful meal.
Ingredients:
  • 1 lb turkey breast tenderloins
  • 3 medium red, yellow, orange or green bell peppers, cut into 1/4-inch strips
  • 2/3 cup chicken broth
  • 1 teaspoon dried basil leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 3 tablespoons white wine vinegar
  • 1 tablespoon cornstarch
Instructions:
  • Preheat a nonstick skillet over medium heat. Sear the turkey in the skillet for about 5 minutes, turning it once, until golden brown. Remove the turkey from the skillet.
  • Place bell peppers in a skillet over medium heat for about 3 minutes, stirring often, until slightly tender. Add broth, basil, salt, and red pepper. Bring to a gentle boil, then lower the heat. Add the turkey back into the skillet. Cover and let it simmer for around 10 minutes, stirring occasionally, until the turkey is fully cooked through.
  • Take the turkey out of the skillet and keep it warm. Push the bell peppers to the side of the skillet. In a small bowl, combine vinegar and cornstarch; then stir this mixture into the liquid in the skillet. Bring it to a boil, stirring constantly. Let it boil and stir for 1 minute. Coat the peppers with the sauce. Slice the turkey thinly and serve with the sauce.
