Savor grilled herb and fruit marinated turkey tenderloins for dinner.
Ingredients:
  • 1 cup plum jam or any fruit jam
  • 1/4 cup dry sherry or chicken broth
  • 2 tablespoons olive or canola oil
  • 1 medium onion, finely chopped (1/2 cup)
  • 2 teaspoons chopped fresh or 1/2 teaspoon dried rosemary leaves, crumbled
  • 1 1/2 teaspoons garlic salt
  • 1/4 teaspoon pepper
  • 1 1/2 pounds turkey breast tenderloins (about 3 tenderloins)
Instructions:
  • Combine all ingredients, except for the turkey, in a medium bowl. Place the turkey in a shallow glass or plastic dish, or a heavy-duty resealable plastic bag. Pour half of the plum mixture over the turkey and ensure it is evenly coated. Set aside the remaining plum mixture. Cover the dish or seal the bag, then refrigerate for 30 minutes, turning the turkey once.
  • For charcoal grill, position the drip pan underneath the grilling area and spread coals along the firebox's edge. Preheat grill for indirect heat, whether using coals or gas.
  • Take out the turkey from the marinade and set aside the marinade for basting. Grill the turkey covered, placing it over a drip pan or the unheated side of a gas grill, positioned 4 to 6 inches away from medium-high heat for 25 to 30 minutes. Remember to turn the turkey and brush with the reserved marinade occasionally until the turkey juices run clear when the thickest pieces are cut. Get rid of any leftover basting marinade.
  • Warm up the plum mixture and drizzle it over the sliced turkey.
