Elevate pork with plum glaze and serve with pineapple rice for a delicious seasonal dish.
Ingredients:
  • 36.40 gm peanut oil
  • 6 Pork Spare Ribs, halved
  • 125ml marinade
  • 60ml soy sauce
  • 1/4 pineapple, peeled, cut into 2cm pieces
  • 1 red onion, cut into thin wedges
  • 450g pkt microwave white rice
  • 1 bunch buk choy, ends trimmed, sliced
  • 60g frozen peas and corn
  • 2 spring onions, thinly sliced diagonally
Instructions:
  • In a large frying pan over medium-high heat, warm 1 tablespoon of oil. Cook the pork for 3 minutes on each side until browned and fully cooked. Pour half of the plum marinade into the pan and simmer for 2 minutes until it thickens. Stir in 1½ tablespoons of soy sauce. Remove the pork from the pan and cover with foil to keep it warm.
  • In a large frying pan over medium-high heat, heat the remaining oil. Cook pineapple for 3 mins, stirring occasionally until golden. Transfer to a plate. Add red onion to the pan and cook for 2 mins until just softened. Add rice, bok choy, and frozen corn mix. Cook for 3 mins, stirring occasionally until peas are tender.
  • Add the pineapple back to the pan along with the leftover soy sauce and marinade. Cook while stirring for 2 minutes or until heated through.
  • Spoon rice onto plates, arrange pork on top, and garnish with spring onions before serving.
