Ingredients:
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 2 (15.25 ounce) cans whole kernel corn, drained
  • 1 (10 ounce) can diced tomatoes with habanero peppers (such as RO*TEL® Hot)
  • 0.5 cup thinly sliced green onion, white and green parts
  • 2 tablespoons chopped fresh cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.125 teaspoon ground cumin
  • 2 cups shredded sharp Cheddar cheese
Instructions:
  • Combine sour cream and mayonnaise until fully blended. Set aside.
  • Mix together corn, diced tomatoes, green onions, cilantro, salt, pepper, and cumin in a large bowl. Stir in sour cream and then gently fold in Cheddar cheese.
