Spicy corn sausage chowder with potatoes in creamy evaporated milk broth - perfect for a quick and tasty weeknight meal.
Ingredients:
  • 1 pound bulk breakfast sausage
  • 1 cup chopped onion
  • 0.75 cup chopped celery
  • 3 cups 1/2-inch diced red potatoes
  • 2 cups chicken broth
  • salt and ground black pepper to taste
  • 1 (14 ounce) can whole kernel corn
  • 1 (14 ounce) can cream-style corn
  • 1 (12 fluid ounce) can evaporated milk
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper, or to taste
Instructions:
  • In a Dutch oven over medium-high heat, sauté sausage, onion, and celery until sausage is golden brown and crumbled, about 5-7 minutes. Discard any excess grease before proceeding.
  • Combine potatoes, chicken broth, salt, and pepper with the sausage mixture and bring it to a boil. Simmer gently until the potatoes are tender, approximately 10 minutes. Stir in whole kernel corn, cream-style corn, evaporated milk, paprika, and cayenne pepper; continue to simmer until everything is heated through, about 5-10 minutes more.
